Yeah…you read that right. Whole wheat chocolate chip banana bread. It’s a mouth-full, but this is a good one. This bread is thick with a nice crust on the outside, and sooo gooey on the inside. I made this recipe with Bob’s Red Mill Organic Whole Wheat flour and other simple, whole ingredients. This dessert is refined sugar-free and only takes an hour start to finish, so let’s get started!
Whole Wheat Chocolate Chip Banana Bread
- 3 very ripe bananas
- 3 organic/ pasture raised eggs
- 1/2c one ingredient peanut butter (more liquidy)
- 1 tbsp pure maple syrup
- 1 tbsp liquid coconut oil
- 1c Bobs Red Mill organic whole wheat flour
- 1 tsp baking powder
- dash of sea salt
- 1/2c dairy free chocolate chunks plus more for topping
Preheat oven to 350 degrees. Peel, then mash bananas in a medium-sized mixing bowl and add in all the wet ingredients. Stir until combined then add in the flour, baking powder, and salt. Mix thoroughly then fold in the chocolate chunks. Pour the batter into a bread pan sprayed with coconut oil and top with more chunks. Bake for 40 minutes, let cool for 5, and enjoy.
