There are few things in this world that I can’t stand. Hot coffee and hot oatmeal in the midst of the summer heat are a few of those things. Alas, I have come up with two solutions; iced coffee and overnight oats. (More on iced coffee later). Overnight oats are a new-found staple for me. There are so many pros to overnight oatmeal, it’s a QUICK, EASY, and COOL way to start your day.
When I say overnight oats are “quick” I mean it in the way that all you have to do to prepare it is, add all the ingredients into a mason jar (or container with a lid), give it a good stir, and let sit overnight. In the morning you grab the jar and can enjoy on the subway, on your morning walk, or at your desk. Let me know in the comments what you would like to see next and if you enjoyed the oats!
Vanilla Chia Overnight Oats
Ingredients (Serves 2)
- 1c old-fashioned oatmeal
- 2c unsweetened vanilla almond milk
- 1/4c organic chia seeds
- dash of vanilla extract
- cinnamon to taste
- *optional toppings* strawberries, wild blueberries, blackberries, coconut flakes, natural peanut butter (only ingredient should be peanuts), walnuts
Combine all the ingredients into a mason jar or sealed container and stir well, ensuring there are no clumps. Let sit overnight or at least 4 hours. In the morning either eat as is or add on desired toppings. Enjoy!
